Overcoming complacency and getting out of a rut.

Veggie Omelette. With cucumber on the side (mostly for the beauty factor)

Do you ever find yourself stuck in a rut? What do you do to get out of it?

When I am in a lull, I usually I will change little things like: brushing my teeth with my non-dominate hand, taking an alternative route to work, trying a new workout, or simply changing my go-to breakfast (pancake).

Here's an example of a different breakfast I will make. It's pretty simple but so satisfying.

Back to the basics: Veggie Omelette. Low cal. Low Carb. Milk free. Amazing.

Ingredients:

2 Eggs

1/2 cup Mixed veggies (I used sweet peas, carrots, and spinach)

1/4 Almond cheese

2 TBS Nightshade free salsa

1/4 Cucumber

1 tsp Cumin

1 tsp Pink Himalayan Salt

1/2 tsp Black Pepper

Instructions:

Throw all ingredients in small bowl, mix together thoroughly. Put mixture in non-stick small omelette pan. Heat on medium-high for approximately 7 minutes. Place plate on top of non-stick small omelette pan and flip over. Viola. Serve with sliced cucumber and salsa.
